TEA CAKES
• 1 cup butter
•
1 teaspoon vanilla flavoring
• 3 cups sugar
• 3 eggs
• 5 1/2 cups self rising flour (save enough
to flour cutting board and rolling pin)
• 3 tablespoons milk
Cream butter and sugar, add eggs one at a time.
Add milk, flavoring and flour. Divide dough and roll very thin; use your favorite cookie cutter to cut dough. Bake at 350
for 8 to 10 minutes. Makes about 6 dozen or more if you roll wafer thin.
Bayou Brownies
•1 cup chopped pecans
•½
cup butter, melted
•3 large eggs
•1 18.25 oz pkg. yellow cake mix
•1 8 oz pkg. cream cheese, softened
•1
16oz pkg. powdered sugar
Combine a cup of chopped pecans with ½ cup
butter, 1 egg, and a box of yellow cake mix. Stir until well blended and press into the bottom of a lightly greased 13 X 9
pan. Set this aside and prepare the top layer by combining the last 2 eggs with an 8oz package of cream cheese and a box of
powdered sugar; beat until smooth and pour cream cheese mixture over the cake mix layer. Bake at 325 ° for 40 minutes or until
cheese mixture is set. Let cool completely before cutting into squares and ringing the porch bell. Dee-licious!
Cookies and Cream Brownies
Brownies:
•½ cup melted butter
•½
cup sugar
•½ cup brown sugar
•½ cup baking cocoa
•2 eggs
•½ cup all-purpose flour
•1
teaspoon baking powder
•1 teaspoon vanilla extract
•12 cream-filled chocolate sandwich cookies, crushed
Cream cheese layer:
•1 (8 ounce)
pkg. softened cream cheese
•¼ cup sugar
•1 egg
•½ teaspoon vanilla extract
I’ve already made the topping and
set it aside-- it's easy. Just beat together one eight ounce package of cream cheese with a fourth cup of sugar, an egg, and
a ½ teaspoon vanilla extract. You can go ahead and crush up the cookies, too. I have!
We’ll start our brownies by taking
this big mixing bowl and combining one half cup of melted butter with ½ cup white sugar, a half cup of brown sugar, and a
half cup of baking cocoa. As soon as I get this good and creamy, I’m gonna stir in a half-cup of all purpose flour and
a teaspoon of baking powder. Just like this…Now, we’ll add two eggs, slowly, one at a time. That looks good. Now,
we’ll add a teaspoon of vanilla extract and our crushed up cookies.
That's about it! We’ll spoon our brownie
mix in the bottom of a greased 9x11 pan, top with our cream cheese layer and finish by swirling a knife through both layers
to make it pretty. Bake at 350 degrees for 25-30 minutes and let ‘em cool before slicing.
